It can be challenging to label any kind of caviar as "sustainable," since it's not something that anyone truly needs. It's a luxury.
That said, there's a role for luxuries in sustainability. We're still learning key parts of how to run a sustainable food supply- like how to raise fish, without emptying the oceans for their feed.
Farms that grow fish for the general food supply have be affordable. They can't afford to experiment. And in a time when public support is declining for all kinds of R&D- including improving our food systems- that means those who can afford to experiment need to step up.
