Old traditions, sustainable new roots

Caviar is a delicate thing, but throughout its history, it often came from rough and isolated places. The commitment to craftsmanship had to be utmost to create a quality product under difficult conditions.


Persephone’s source farm, nestled into the Blue Ridge mountains of North Carolina, has married this tradition with cutting-edge sustainable technology so that the farm can rest light on the land. Water is cleaned, purified on the farm using beneficial microbes, and reused in a balanced cycle. In this way, there’s no need to make endless demands on local water or release pollution into the environment. 


Fish are kept healthy by giving them plenty of space, averting many of the health issues that can plague raised fish. This is especially important for sturgeon. These fish have sharp plates; repeated bumps from overcrowding leave injuries, misshapen fins, and other long-term damage. Poor health and overcrowding are difficult to hide with sturgeon. The fish at our Blue Ridge source farm show clear, healthy skin that would make any human proud— even at their largest, most collision-prone size. Persephone is proud to support our farmer’s top-notch work in sustainable aquaculture.
